Imagine having long thin fingers with near-pinpoint accuracy, that also never burned or got dirty. Oh, and if you really get desperate, you could use them to skewer things too. With a little practice, chopsticks are not far from that, and it really makes a wide array of cooking tasks a lot easier for someone with even rudimentary chopsticks skills.
Some obvious benefits:
1) Pick up and manipulate small objects without impaling or damaging them.
2) Easily rotate / flip items that need to be cooked on both sides in a pan.
3) Carefully place garnishes or decorations on hot food, or frosted desserts where using your fingers would ruin the smooth coating.
4) Extract bones, peels, and other undesirable items from large mixes (casseroles, soups, and so on).
