Mussels & RicePilaf with mussels25-30 minutes / 4 servings- a good dish if you like mussels.

Ingredients- 1 lb frozen mussels, shelled and cleaned
- 1 onion, chopped - 1/4 cup white wine - 3 tblspoons olive oil - 1 tblspoon basil, minced - 1 tblspoon tomato paste - salt and pepper to taste - 2 cups warm water - 1 cup rice Directions- sauté oil and onion, on high, for 3-4 minutes, stirring
- add mussels and continue sautéing and stirring for 7-8 minutes - pour over wine, stir - add salt, pepper and basil, stir - dissolve tomato paste in water and pour in cooking pot - add rice, stir well, place lid on, lower heat to medium, and cook until all water is absorbed (12 -15 minutes) - remove cooking pot from hot surface, take lid off, and let stay for about 10 minutes. note: cooking time will vary depending on type of rice you use; add a little bit of warm water and continue cooking for a few more minutes, if rice is not done. |
