Black beans & rice45 minutes / 4This is a quick dinner for cold days. High in fiber and iron content.

Ingredients1 large brown onion
3 cans of black beens 5 scallion with the greens 12 oz chicken broth 1 cup boiling water 2 cups white rice salt & pepper Garlic powder Paprika 2 tbsp olive oil tomatoes or pico de gallo (salsa) grilled breast of chicken strips (optional) DirectionsChop brown onion.
Rinse black beans and set aside. In large skillet, brown the chopped onion in the olive oil. When onion turns slightly brownish add black beans and saute for one minute. Be careful to not burn bottom of pan. If chicken is used, add to the pan and brown for 1 minute. Pour in chicken broth, add spices to taste, and bring to a boil. Add boiling water. Add rice. Make sure water level is at least 1" above ingredients. If needed, add more boiling water. Cover and simmer until rice is cooked. Check frequently to stir and make sure ingredients do not stick to bottom of pan. Serve with chopped scallions on top and either chopped fresh tomatos or pico de gallo ( fresh salsa ) |
