Ingredients- 1 large eggplant
- 4 hard-boiled eggs - 1 large, fresh green bell pepper salt and pepper cooking oil your favorite bread, sliced Directions1. Cut eggplant into 1cm thick circular slices.
2. Deep fry eggplant slices in oil until brown. 3. Place slices on paper towels to absorb excess oil. 4. Prepare open-faced sandwich over preferred bread with fried eggplant slices, sliced hard boiled eggs, sliced bell peppers, and salt and pepper to taste. |
