Blintzeseastern european crepes / thin pancakes30 min / serves 4 peopleThese pancakes can be eaten with either salty or sweet fillings.

IngredientsFor the mix:
- 2 eggs - 2 cups flour - 1/2 cup milk - 1/2 cup water - teaspoon sugar - 1 tbsp orange juice salt For the frying: 8" non-stick pan and vegetable oil or butter For serving: Salty cheeses (e.g., sour cream, labne, cottage cheese, feta, etc.) and/or Jams DirectionsPreparing the mix:
Place all ingredients in a mixing bowl, and using a hand-held mixer, bring to homogeneous, thick and milky consistency (this should take a few minutes). Frying the blintzes: In a non-stick frying pan over medium heat, pour 1 teaspoon (or less) vegetable oil (or butter). When the oil has heated, pour enough mix in to fill an 8" pan with a thin layer (this should be about one ladle full). In about 20-30 seconds this should harden into a thin pancake which can be flipped onto opposite side. Brown it on the other side for roughly 30 seconds, and then place in a plate where others will be stacked. Refill oil as needed and repeat until mix is finished. For serving: These are tasty rolled either with sweet or salty fillings (see ingredients). |
