Ingredients- Zucchini, as many as you want
- salt - equal parts of olive oil and balsamic vinegar - dry oregano - pepper Directions- Boil zucchini in plenty of salted water (50 - 60 minutes)
- take them out of water and refrigerate - use one boiled zucchini or two to make a salad for one person - slice it in wheels ( about 1/2 inch thick) - arrange them on plater - mix well oil, vinegar, pepper and oregano - pour over zucchini |
