Ingredients- 2-3 cups cooked rice (see link)
- 1 lb frozen mixed vegetables - 1 large onion, thinly sliced - 3 tblspoons olive oil - 2 tblspoons dill, minced - salt and pepper to taste Directions- place frozen vegetables, in salty boiling water (1 teaspoon salt in a medium pot, 2/3 filled with water), boil for about 10 minutes, or until tender, and then drain
- place oil, dill and onion in frying pan and sauté, on high, for 3-4 minutes, stirring - add drained boiled vegetables and sauté for another 4-5 minutes, stirring - add cooked rice, stir and toss for a couple of minutes. |
