Now I find it's one of my "signature" dishes, although that may be because most people aren't willing to use cayenne pepper in the same ways I am (and hence remember me as the crazy guy who put cayenne pepper on the apple dessert).

Ingredients3-4 fresh granny smith apples
3 tablespoons honey 2 tablespoons vanilla extract 3 tablespoons cream (use low-fat, if you like) 1 tablespoon cinammon 1 teaspoon cayenne pepper DirectionsChop the apples into slivers, flakes, or dice, depending on which geometry makes you happiest. If you want it uniformly cooked, make small (say 1cm) pieces; if you want a raw and fresh blast of sour apple in the center (you do, trust me), use larger pieces (say 2-3 cm on a side).
Pour the honey onto a pan and heat at the lowest level until the honey is quite smooth and liquidy. Add the vanilla, and mix briefly to spread it around. Toss in the apples, and saute them (stir constantly) for 5 minutes. Add the cinammon and cayenne pepper, and saute for another 2-3 minutes (still stirring). Drizzle the cream over the top, and quickly toss the mixture to spread it around. Serve immediately; if you like, add ice cream! |
