Ingredients1 lb de-boned beef shank cubed
1/2 lb minestrone salt and black pepper plenty of water DirectionsPlace water (at least 4 times the volume of the meat), beef, salt and pepper in a cooking pot and boil until beef very soft
Add minestrone (1 part minestrone to 3 parts broth) Cook for about 10 minutes or until minestrone rubbery soft. Notes: - any left over broth can be saved to be used as stock for other dishes. - 1 lb of beef shank can make a good quantity of broth. - beef shank is very soft and juicy once it is bolied well. |
