1 cup boiled whole wheat
4 tomatoes, chopped
1 red onion
1 big bunch flat leaf parsley, chopped
300g feta cheese, crumbled
2/3 part olive oil
1/3 part balsamic vinegar
1 tspn honey
1 chopped garlic clove
Boil the wheat until soft enough to bite through but not mushy (25-45 mins) *
Meanwhile, make the dressing with 2/3 part olive oil 1/3 balsamic vinegar, very finely chopped garlic clove, mixed with mustard, honey salt+pepper. this should emulsify.
Toss wheat in dressing, and mix in remaining ingredients
* If instead of wheat using lentils, boil 25 minutes, drain wiht cold water. Also, you can replace wheat with chickpeas from a can, rinsed.
