IngredientsRice dunes & chicken in red sauce
- 1 lb chicken, thinly sliced (chinese style) - 1 can peeled whole tomatoes (small) - 3 tblspoons parsley, chopped - 1 medium onion, sliced - 4 tblspoons olive oil - salt and black pepper to taste - ¾ cup warm water - 3 cups cooked rice Directions- sauté onion in olive oil for 3-4 minutes, stirring
- add chicken and continue sautéing for 8-10 minutes, stirring - empty can of tomatoes over chicken - add parsley, salt and pepper and pour over water - let simmer until water has evaporated (about 20 minutes) - spoon cooked rice into a small glass or cup and press, then empty it on to dish carefully so as no to ruin the shape; repeat the process with the rest of rice - serve over and around rice dunes chicken with tomatoes |
