Ingredients- 10-12 small sausage links, sliced
- 1 onion, chopped - 3 tblspoons olive oil - ½ lb frozen small okra - 1 stalk celery, sliced - 1 can tomatinos, or peeled tomatoes, diced - 1 or 2 bay leaves - 1 teaspoon thyme - 1 teaspoon oregano - salt, black pepper and cayenne pepper to taste. - ¼ cup rice - 1 cup warm broth or warm water. Directions- sauté olive oil and sausage links for about 3-4 minutes, tossing and stirring
- remove sausage from pan, add onion and sauté for 4-5 minutes, stirring - add frozen okra, celery, and green pepper, and sauté for 5-7 minutes, stirring. - Add tomatinos or diced tomatoes, and sauté for 2-3 minutes. - Add remaining ingredients, including sausage, stir, cover pot and simmer for about 12-15 minutes. Serve with yogurt |
