Pasta with Fetaquick summer meal15 minutes/ 4-6 servingsEasy quick meal, can be served with tomato salad

Ingredients1pck spaghetti (or your favorite pasta)
10 oz feta cheese (can use more or less as you prefer) 1/3 cup pine nuts 2 tbs olive oil DirectionsIn a 4- to 5-quart pan over high heat, bring 2 quarts water with salt to a boil. Add pasta and cook( stir occasionally) until al dente, about 10-12 minutes. Drain.
While pasta is cooking: 1) Toast the pine nuts- place the pine nuts in a small pan over medium heat, stir and watch closely - pine nuts should turn gold to light brown. Remove from pan immediately to avoid over browning. 2) In a serving bowl crumble the feta cheese using a fork. Transfer the hot pasta to the seving bowl , add the toasted pine nuts and olive oil-toss gently until evenly spread. Enjoy!!! |
