Spinach and Beef Manicotti / Cannelloni

a tasty main dinner dish, with tortillas

30 minutes prep + 40 minutes cooking / 4 servings

Authentic manicotti is prepared with crepes (or blintzes, see link). For quicker preparation, I use flour (not corn) tortillas instead.

Ingredients

- 12 flour tortillas (or crepes or blintzes, see link)
- 1 lb ground beef
- 1 small onion
- 1 package frozen chopped spinach (10 oz)
- 2 tbsp flour
- bechamel sauce with 1.5 cups milk (see link for preparation. may prepare lighter version by using half as much milked with equal part water).

Directions

* Obtain/prepare tortillas, crepes, or blintzes.

Preparation of the meat:
* Sautee chopped onions in frying pan
* In the same frying pan, over medium heat, add ground beef mixing constantly to break up big chunks.
* After 10 minutes, add thawed (for example, in a microwave) spinach, the flour, and salt and pepper to taste. Keep mixing for another ~5 minutes on lower heat.

Now, obtain or prepare the bechamel sauce (see link). For this recipe, I use spiced bechamel with a pinch of nutmeg. Place a little bit of this suace in the bottom of a large baking dish that can accomdate all the rolled tortillas.

Preparation of the "manicotti":
* Pre-heat oven to 350 F.
* Inside each tortilla (or substitute), place a few table spoons of the meat mixture, and roll.
* Place all the rolled tortillas together in sauced baking dish. They should fit together snugly, so that they do not unroll.
* Pour the remaining bechamel suace over the manicottis.

Bake for about 30-40 minutes, making sure the bechamel doesn't burn, dry, or overly brown.

This is complemented well by a side salad.
