Quiche - rice noodles & broccolirice noodles, broccoli, bacon and eggs30 minutes / 4-6 servingsa very good side dish or even main course

Ingredients- 4-6 oz rice noodles, boiled in salty water
- 2 tblspoons oil or margarine - 2-4 bacon stripes, chopped - 1-2 handfuls broccoli, chopped - ½ teaspoon thyme - 4-6 eggs, beaten - 4 tblspoons cornmeal - 1 cup milk - salt and black pepper to taste Directions- boil and strain rice noodles
- place oil in a frying pan and heat - add bacon and sauté for 2-3 minutes, stirring - add broccoli and thyme, and sauté for another 5-7 minutes, stirring and tossing - mix cooked rice noodles and broccoli/bacon mix, - season with salt and pepper, and empty into baking dish (about 10x10 inch) - in a bowl, mix eggs and cornmeal and beat; add milk and stir - pour over mix in baking dish - bake, on high, for about 15 minutes (preheated oven) Note: you may substitute rice noodles with spaghetti |
