Cheese-crust spinach pie

cheddar and/or gouda cheese crust, spinach & herbs

30 minutes for filling, 5 minutes for crust, 40 minutes baking time / 4-6 servings

an easy to make pie, especially of you have stored spinach filling in refrigerator.

Ingredients

Filling
- 1 ½ cup spinach filling (see link)
- ½ cup shredded gouda and/or cheddar cheese
- black pepper

Crust
- 1 cup flour
- 4 tblspoons olive oil
- 6-7 tblspoons water
- 1 cup (not packed) shredded gouda and/or cheddar cheese

Directions

- preheat oven (375) with baking pan (9-10 inch round) in it
- mix well all crust ingredients
- take baking pan out of oven, and spray with no-stick cooking spray
- place dough in it and using your palms press and spread it evenly over bottom and half its walls
- add spinach mix (after you drain any excess fluids)
- spread over it shredded cheese and sprinkle with black pepper
- bake for about 40 minutes

note: recipe for spinach filling is enough for 2 even 3 pies; you can refrigerate remaining or even freeze it for next time.
