It's easy to keep the ingredients on hand, and so I'm never more than ten minutes away from a satisfying and healthy meal.

Ingredients1 large flour tortilla (about 10 inch diameter)
1 cup chopped romaine lettuce 1 large tomato 1/2 avocado 1 tablespoon mustard optional: spicy pepper sauce (to taste) DirectionsLay the tortilla out on a plate or other flat surface.
Spread the mustard over the center of the tortilla, pressing into it slightly with a spoon so it is slightly absorbed by the bread. If you're using the pepper sauce, spread it on as well. Chop the tomato and avocado into cubes about 1 cm on a side, and spread them across the tortilla. Spread the lettuce evenly over the chopped tomatoes. Heat an empty pan on medium for 2-3 minutes, then place the tortilla flat inside it (bread side down). Heat for 5 minutes on high (or until surface is browned to your liking). Fold the tortilla in half. You're ready to eat! |
