Ice cream – Frozen Yoghurtyoghurt, whipped cream, honey, lemon rind, chocolate covered rainsins10-15 min prep, 3-5 hours freezing time / 6-8 servingstasty and light, homemade ice cream

Ingredients- 1cup thick yoghurt
- 2 cups thick whipped cream - 200 ml thick cooking cream - 4 tblspoons honey - rind (grated outer part of peel) of 1 lemon - juice of 1 lemon - handful of chocolate covered raisins Directions- using a mixer, beat yoghurt, whipped cream and cooking cream, for 3-4 minutes
- add lemon juice, rind and honey, beat for another 2-3 minutes - add chocolate covered raisins, and using a spoon, fold into mix - place in a plastic or glass container, cover with lid and freeze for at least 3 hours note: the thinner the layer of ice cream in the container the faster it will be ready note: if the mix is not thick, place raisins softly on top instead of folding them into the mix; the mix will harden before they make their way to the bottom of the container |
