Israeli Cous cous saladSalad with tomatoes, yellow bell pepper, feta, and raisins.15 min. / Serves 2-4I really love different types of salads in the summer, and this is a great one!

Ingredients1 Cup Israeli Cous cous
1 1/4 Cups water 2 Tomatoes 1 Small Onion 1 Yellow bell pepper 1 Lemon Raisins Feta Cheese Olive oil, mint, salt, pepper Note: If you can't find Israeli cous cous (which is different than regular cous cous), you can substitute with regular cous cous, pasta, whole wheat, etc. Directions- Bring the water to a boil and add the Israeli cous cous (if preparing with any other grain, just follow the cooking instructions for that specific one)
- Lower heat, cover, and let simmer for 8-10 min. - Rinse with cold water to cool down -While the Israeli cous cous is cooking chop the tomatoes, onion, yellow bell pepper, and feta. Soak the raisins in hot water to soften them a little. - When the Israeli cous cous is cooked and cool mix everything together. Add olive oil, lemon juice from the 1 lemon, mint, salt and pepper. |
