Cheese pies ( or "tiropites" in greek )

Feta cheese, cottage cheese, fillo pastry

30 minutes prep / 30minutes baking / 50 pieces

in photo, 3 pies are baked, one is at the last step of folding in the triangular mode, and the other is at the first step of folding.

Ingredients

- ½ lb feta cheese, shredded
- 1 lb cottage cheese
- 1 egg beaten
- fillo pastry (about 1 lb), preferably the very thin type
- ½ cup corn oil (or sunflower oil)

Directions

preparation
- combine feta cheese, cottage cheese and egg
- take fillo pastry out of box, and before you take it our of plastic wrap cut into 3 inch segments (as it is rolled up).
- unfold one small roll of fillo pastry on a flat surface
- brush top layer fillo with oil
- place on teaspoon of cheese mixture at one end of the fillo just covered with oil
- picking one corner of fillo, next to cheese mixture, fold fillo so as to form a triangle holding the cheese mixture
- continue folding in this triangular mode until all fillo is wrapped around cheese mixture and the end result is one triangular pie
- repeat process until all pies are ready

Baking

- Place pies in baking pan, not touching each other, and poke their top with a sharp knife (2-3 times)
- Place pan in preheated oven (375) and bake for about 30 minutes or until top gets golden brown.


Note: may be served warm or cold

Note: bake only the ones you want to consume immediately and freeze the rest

Note: to freeze, lay out in separate layers, on aluminum foil, and cover tightly; no need to defrost before baking, just allow 10-15 minutes longer in baking time.

Note: if making triangles is difficult for you, you may make one cheese pie in a baking pan; to do this, lay one fillo at a time, brush with oil, until you have layered 5-7, pour over he cheese mixture, lay over another 5-7 fillo brushing with oil in between layers, and bake.
