Potatoes & meat "kapama"meat and potatoes in red sauce1 hour / 2-4 servingsa very tasty and nutricious dish

Ingredients- 1 lb meat of your choice, cubed or thinly sliced
- 2 lb potatoes, sliced in 1 cm width round slices - 5 tblspoons olive oil - 1tblspoon tomato paste - salt and pepper to taste - very little cinnamon (1/4 teaspoon) - 1 cup warm water Directions- In a small cooking pot (about 9 inch) heat up oil
- Place potatoes in pot and sauté for 5-7 minutes, stirring and tossing - Remove potatoes from pot - Place in pot meat and sauté both sides until whitish/golden brown (4-6 minutes) - Add salt and pepper - Add sautéed potatoes and arrange for all ingredients to be on one level. - Add tomato paste diluted in water (it must cover ingredients; if not, add water) - Add cinnamon - Turn heat down to medium-low and simmer for about 1 hour, shaking up pot occasionally. Serve with green cooked green peas (see link) |
