Ingredients1 lb grated zuchinni
salk 2 3/4 cup flour 1 1/2 teaspoon baking powder 1 tablespoon baking soda 3 eggs 1 cup sugar 1/2 cup vegetable oil grated lemon rind 1 tablespoon lemon juice 1 tsp vanilla extract 1 cup chopped nuts (walnuts, almonds) Directionsgrate zuchinni, salt and drain, then squeeze dry (yields ~ 2 cups)
sift dry ingredients beat eggs, sugar, oil, vanilla, lemon in large bowl add dry ingredients, zuchinni, nuts pour in loaf pans bake at 350 F for 50-60 min |
