Anchovies

small fish, fried or grilled

10 minutes to clean, 10 minutes to cook / 2-4 servings

Small fish is said to be the safest choice when it comes to eating fish. The explanation is that it is too small and too young to have absorbed significant quantities of pollutants (toxins). And if you can eat it with the bones (make sure you chew well), you get lots of absorbable calcium.

Ingredients

- 1 lb fresh anchovies
- olive oil, enough to cover the bottom of pan
- salt & pepper
- ½ lemon

Directions

- remove heads and intestines and wash
- season with salt and pepper
- heat oil in pan
- place anchovies in frying pan
- when bottom side is done turn over and continue frying until done
- using a holed spatula, remove anchovies from pan and place on platter
- sprinkle over lemon juice

note: you may grill them, if frying is not for you
note: if you use small fish other than anchovies, you may need to remove scales; anchovies have no scales
