small fish, baked

10 minutes to clean, 45 minutes baking time / 2-4 servings

Small fish is said to be the safest choice when it comes to eating fish. The explanation is that it is too small and too young to have absorbed significant quantities of pollutants (toxins). And if you can eat it with the bones (make sure you chew well), you get lots of absorbable calcium.

Ingredients

- 1 lb fresh anchovies
- 1 small tomato, sliced
- 2 cloves garlic, sliced
- 2 tblspoons parsley or mint, minced
- 2 tblspoons lemon juice
- salt & pepper
- 3 tblspoons olive oil
- 1/3 cup water

Directions

- remove heads and intestines and wash
- place anchovies in small baking pan (one layer)
- add on top all other ingredients
- bake in preheated oven, at 400 F, for about 45 minutes

note: anchovies have no scales; if you use other type of small fish, you may have to remove scales
