Ingredients- 1 lb frozen white beans
- 1 large tomato, chopped - 1 large onion, chopped - 2 garlic cloves, chopped - 1 twig rosemary - 1 red bell pepper, sliced - 6 tblspoons olive oil - salt and pepper to taste - 1 ½ cup water Directions- using cooking pot, sauté onions and garlic in olive oil for 3-4 minutes
- add frozen beans and sauté, stirring and tossing, for 5 minutes - add red bell pepper and tomato, stir for another 2-3 minutes - add water, salt, pepper and rosemary, cover cooking pot with lid and cook, over medium, until beans soft (about 1 hour) - empty beans into a baking pan, place in oven and bake, at 300 F, until you are ready to serve. |
