Ingredients- 1 medium cauliflower, washed and sliced in wedges
- 6-8 tblspoons olive oil - 2 tblspoons tomato paste, or 1 can peeled tomatoes - 2 cups warm water - juice of 1 lemon - salt and black pepper to taste - ¼ teaspoon ground cinnamon optional: 1 envelope onion soup mix (if so, do not add salt) Directions- sauté cauliflower for 6-8 minutes, stirring - season with salt and pepper (hold salt if you add onion soup mix) - add lemon juice, stir - add water with tomato paste dilute in it, and cinnamon - (add onion soup mix) - bring to a boil, cover pot, lower heat to medium/low and simmer for about 1 hour note: you may speed up the cooking process but, if so, you will need to keep an eye on it in case you need to add some water. |
