Peanut Butter SoupSpicy soup, with peanut butter30-35 minutes / 4-6 servingstasty and heart warming

Ingredients- 1 large onion
- 2 garlic cloves - 2-3 tblspoons olive oil - 1 teaspoon chili powder - 2 red bell peppers, shredded - 2 carrots, shredded - 2 potatoes, peeled and cubed - 4 cups warm water or stock - 6 tblspoons crunchy peanut butter - salt and cayenne pepper, to taste roughly chopped peanuts, to garnish Directions- sauté onion and garlic in oil, 3-4 minutes, stirring
- add chili powder, salt and pepper, stir - add vegetables, continue sautéing for 5-7 minutes - add water, bring to a boil, simmer for about 20 minutes, or until soup has thickened - before serving, garnish with peanuts |
