Ingredients- 3 tblspoons olive oil
- 4-5 green onions, chopped - 1 garlic clove, crushed - 1 teaspoon cumin powder - 1 ½ cup vegetable stock or water - 1 cup couscous (or bulgur wheat for tabbuleh) - 2 fresh tomatoes, chopped - 2-3 tblspoons fresh coriander, minced - 2 tblspoons lemon juice - salt and black pepper to taste minced coriander to garnish Directions- sauté onions and garlic, 4-5 minutes, stirring
- add stock or water and bring to a boil - remove pot from heat, add couscous, cover pot, let stay for about 10 minutes or until water has been absorbed - empty couscous mixture into a bowl - add remaining ingredients, mix well |
