Bulk Shopper's Vegetarian/Vegan Pasta

Easy vegetarian pasta that can be made from any bulk food supplier

30 minutes, serves 2~4

I live by a Smart and Final at USC and I found a good recipe that is filling and tastes pretty good and best of all, is very cheap. Many non-vegetarian friends have tried and end up liking it. I tend to buy the discounted goods which end up being the Smart and Final brand. I like to use garlic to help my immune system as well as yellow curry powder which has anti-cancer properties.

Ingredients

Pasta (penne, angel hair, spaghetti, etc. will do)
Tomato Sauce or Tomato sauce with mushrooms
Veggie patties (grillers or garden-style)
Olive Oil
Frozen vegetables -- mix variety (contains lima beans, carrots, string beans, peas)
* Onion
* Garlic
* Curry powder
* Olives

(*=optional)

Directions

1) Pour olive oil into sauce pan and put it on the low setting.
2) Thaw out one or two veggie patties in microwave for 1 minute.
3) Cut up onion and garlic if you have it and put it in the saucepan. I prefer big chunks of garlic, but feel free to go crazy. If you're feeling bold, save some garlic for later and garnish the dish to give it an extra kick (this will probably help your immune system too). I sometimes put curry powder on the onions to give them a yellow tint. Also throw in olives.
4) Put patty/patties in the sauce pan. Grill these by pushing them down with a spatula. Flip them every once in a while.
5) Put water on the boil in a pot.
6) Put in pasta after water reaches boil.
7) Put a good helping of frozen vegetables into water as well.
8) When onions appear to be transparent and both sides of patty/patties are grilled, cut the patties into 8 pieces each (I do this with the edge of the spatula).
9) Pour pasta sauce over patties and vegetables in saucepan. Feel free to put some curry powder in this as well. Season to taste.
10) Let the sauce simmer and thicken a little bit.
11) Drain water from pasta when it has reached desired consistency. Use a colander that can catch the pasta and vegetables. Pour pasta and vegetables back into pot.
12) Once sauce is ready, pour it over the pasta. It is now ready to serve!
