IngredientsGroup 1 - 4 lb pork loin - salt and pepper to taste - cooking paper, or aluminum foil or baking plastic bag Group 2 (sauce) - 6 tblspoons olive oil - 1 large onion, chopped - 3 garlic cloves, whole Group 3 - 4 tomatoes chopped - 2 tblspoons fresh mint, minced - salt and pepper to taste Directions- season pork loin with salt and pepper
- wrap tightly (cooking paper or aluminum foil or baking bag) - place in baking pan (better if on top of a rack inside pan with water underneath rack, to contain leaking liquids) - place pan in preheat oven, and bake, on high, for about 80 min - in saucepan, sauté group 2 ingredients, 4-5 min - add group 3 ingredients and simmer, over low heat, 10 min, or until sauce thickens - when ready to serve, place meat on platter and pour over sauce |
