IngredientsGroup 1
- 1 lb pasta, cooked al dente Group 2 - 5 tblspoons olive oil - 1 heaped tblspoon fresh mint - 4-5 oz feta cheese Group 3 - 1 large tomato, diced Directions- place all group 2 ingredients in food processor and blend until they form a thick sauce (pesto)
- while cooked pasta is still warm, fold in pesto and mix well - add diced tomatoes and mix |
