Cajun Blackened Fish

Blackened fish with papaya sauce

Ingredients

Papaya sauce
- 1 papaya, cleaned and diced
- 1 small red onion, chopped
- 1 fresh red chili, seeded and finely chopped
- 3 tblspoons fresh cilantro, minced
- grated rind and juice of one lime
- salt to taste

Fish
- 2 fish fillets
- Cajun spice
- ½ cup butter, softened

Directions

- Mix all sauce ingredients well and set aside
- Brush butter on each side of the fillets
- Place Cajun spice on plate and dip fish fillets until both sides are well coated
- Place fillets in preheated heavy-bottom frying pan, and cook for a couple of min each side, until blackened
- Place fish filets on plates and pour around them the papaya sauce; serve warm
