Ingredients1 eggplant
1 big onion or 1.5 small onions 1 zucchini 1 red bell pepper 1 can of diced tomatoes 2-3 tbsp tomato paste 2 cloves garlic salt, pepper Directions1. Dice eggplants, zucchini, and bell pepper. Finely chop onions and garlic.
2. In a wok or pot, sautee onions. Then add bell peppers, eggplant, zucchini, and garlic. Stir for a few minutes, until all vegetables are soft. 3. Add diced tomatoes, and a little bit of water. Bring to a boil, and lower heat. 4. Add salt, pepper, and tomato paste. Let simmer for 30 minutes. |
