Cantaloupe soupCantaloupe melon & cucumber soup15 – 20 min / 2-4 servings[0 / 0 found this useful , viewed 54 times]

Ingredients- 1 cantaloupe, peeled, seeded, and cubed
- 1 cucumber, peeled and cubed - 2 tbspoons lemon rind (lemon peel, grated) - 2 tbspoons lemon juice -1 small bunch coriander, finely chopped - salt and cayenne pepper to taste - 1 cup water Directions- saving some coriander to garnish, place all ingredients in a saucepan, bring to a boil, cover pot and simmer for about 10 min.
- allow to cool down, puree using a food processor, refrigerate, serve cold. |
