Ingredients- 1 lb spinach fettuccine pasta, cooked
- 2 ripe tomatoes cubed or pureed - 1 tbspoons fresh basil, minced - Salt and black pepper to taste - 3 tbspoons olive oil - 1 cup cubed mozzarella cheese Directions- Warm olive oil in saucepan
- Add tomato, basil salt and pepper and sauté for 3-4 min - Toss in cubed cheese, mix well and remove from heat (before cheese melts) - Fold into cooked pasta and serve |
