Ingredients- Pureed fava beans: see link
Vegetables - 4 tbspoons olive oil - 1 onion, chopped - 1 bunch arugula (rocket), chopped - 1 tomato, chopped - 1 tbspoon fresh mint or basil, minced - 3 tbspoons pumpkin seeds - salt and black pepper to taste Directions- sauté onion in oil
- add remaining ingredients, and sauté for 5-6 minutes, stirring and tossing serve vegetables with fava |
