Ingredients- 1lb chicken meat, cut into thin strips
- 1 lb eggplant, cleaned and cut into thin strips - 4 tbspoons oil - 2 tbspoons soy sauce - 2 garlic cloves, chopped - 1 teaspoon grated fresh ginger root - 1 pouch (4 oz) black beans sauce Directions- sauté garlic, ginger root in oil
- add soy sauce and stir for a min - add chicken, stir and toss for 4-5min - add eggplant, stir and toss for 4-5 min - add black beans sauce, stir for 1-2 min and remove from heat - serve with rice, or - you may add, before removing from heat, cooked noodles, mix well and then remove from heat |
