- 1 medium potato, cleaned and coarsely grated - 2 eggs - salt and black pepper to taste Directions- heat oil in skillet
- add grated potato salt and pepper, and cook until golden brown (2-3 min) - turn over (like a crepe) and cook until golden brown - add scrambled eggs and either stir and toss (like scrambled eggs) or cook for 1-2 min, turn over and cook for another 1-2 min (like an omelet) |
