Ingredients- 2 eggplant, washed and halved
- 3-4 tbspoons olive oil - 2-3 garlic cloves, crushed - fresh parsley or basil, minced - salt and black pepper to taste - grated parmesan cheese (optional) Directions- wrap eggplant halves with plastic film, or place them in plastic bags, and microwave for 5-6 min
- mix oil, garlic salt and basil - when eggplant is done (flesh is soft)remove from microwave and pout over oil mixture - sprinkle over parmesan cheese - optional: you may broil for just a couple of min until golden brown serve warm note: instead of microwaving you may bake eggplant wrapped in aluminum foil |
