Ingredients- 1-2 lb beef spareribs, boiled in salty water
- 1 large roman lettuce, cleaned and chopped - one stalk celery, cleaned and chopped - 1 can peeled tomatoes in their juice - 6 tbspoons olive oil - 1 large onion chopped - salt and pepper to taste Directions- boil meat in salty water until tender
- sauté onions in olive oil - add lettuce and celery, stir and toss for 2-4 min - add tomatoes, stir for a couple of min - add salt and pepper to taste - add meat and a cup of the meat broth - cook until veggies are soft and tender (add broth if you need to ) serve as is, or with rice or baked potatoes |
