green peas - mediterranean cuisine

50 minutes or less / 4 servings

- tasty
- accompanies well many meat dishes
- especially good with " Rosemary and Garlic Lamb"
- high nutritional value especially if slow cooked
- can be served hot or cold

cooking process can be spead up but atttention must be paid to add water if needed

Ingredients

- 1 lb frozen green peas
- 5 tblspoons extra virgin olive oil
- 1 tblspoon chopped fennel or dill
- 1 medium onion chopped
- salt and black pepper to taste
- one measuring cup warm water

Directions

- saute oil and onion, on high, for 4 minutes, stirring
- add frozen green peas
- saute for another 3-4 minutes (do not forget to stir)
- add fennel or dill, salt and pepper (mix well)
- add water and cover with lid.
- bring to a boil and then turn heat to medium-low
- slow cook for 45-50 minutes
- turn stove off, take lid off and allow extra juices to evaporate
