orange juice cake with sauce

tasty but not as loaded as desserts usually are

nice fresh orangy taste

orange sauce also goes well with vanilla ice cream and pound cake

Ingredients

CAKE
1 cup orange juice (freshly squeezed)
1 cup sugar
2.5 cups flour
- 3 eggs
- 2 tblspoons orange rind, finely grated
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup corn oil
- 2 tblspons thinly sliced white almonds (optional

confectioner's sugar

Directions

CAKE
preheat oven to 360 F

using a mixer:

- beat egg whites in a small bowl until thick and foamy
- beat egg yolks and sugar and oil in a big bowl
- place baking soda in orange juice, keep over bowl, stir until it foams, and empty into mix, stiring while you do this. Beat for antoher minute.
- add egg whites, and orange rind /continue beating
- mix flour and baking powder and add slowly to mix while beating Add almonds, blend.
- empty mix into a baking pan that has been sprayed with no-stick baking spray.
- the mix should occupy i/2 to 1/3 of the height of the baking pan because it will rise.
- bake, in preheated oven at 350, until top turns golden brown ( to make sure it is ready, test with a knife or toothpick). About 35-40 minutes
(to protect top from over baking, fold an aluminum foil sheet in half, open it up and place it over cake to look like a hut roof).
-When ready, take out of oven immediately; overbaking will compromise the fresh taste.

sprinkle, over piece of cake to be served, some confectioner's sugar (for visual effect) and spread some sauce
