makes for a good starter, or appetizer, or side dish, or snack, or late evening supper

Ingredients

filling: use "spinach and herbs recipe" (see link below)

- two layers of thick filo dough (see link if you wish to make your own dough), or thick filo pastry that you can buy at the store.
- 2 tblspoons olive oil

Directions

preheat oven to 375 F

- spray baking pan with no-stick spray
- lay one fillo dough on bottom
- empty on top the spinach mix
- optional: you may add to the spinach mix grated feta cheese
- lay on top of mix the second fillo dough
- using a cooking brush, spread over top layer fillo dough olive oil
- using a sharp knife cut top fillo layer in squares (serving size), like drawing veritcal and horizontal lines from one end of pot to the other.
- place baking pan in oven (bottom rack) and bake until top is golden brown, or about 40-50 minutes.

note: if you use filo pastry, which is not very thick, you should use several sheets, and if so, you should sprinkle a little bit of oil in between the filo sheets.
