IngredientsShrimp in tomato and feta cheese sauce
- 1 lb shrimp (shelled / cleaned) - 2 cups diced fresh ripe tomatoes - 1 green pepper thinly sliced in rings - 1 onion thinly sliced in rings - ½ lb feta cheese - 4 tblspoons olive oil - 2 tblspoons parsley or dill or fennel - pepper Directions- using a frying pan, sauté olive oil and onion, 2-3 minutes
- add green pepper and parsley; continue sautéing, 2-3 minutes - add diced tomatoes and simmer until sauce thickens (extra juices are absorbed), 5-10 minutes - add shrimp and continue simmering for 5-10 minutes - add feta cheese, stir, simmer for 2-4 minutes serve over cooked rice (see link) |
