apple cake

a great light and fluffy cake!

prep 30 min + bake 70 min / makes 14 servings (or 1 if I'm eating it)

This is by far my favorite cake recipe -- I learned it from my mother.

Ingredients

For apple mixture:
- 3 medium-large apples (any variety)
- 3 tbsp honey (or sweet wine, or maple syrup)
- 1 tsp cinnamon

For cake:
- 3 cups flour
- 1.5 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 1/3 cup orange juice
- 3 tsp baking powder
- 2.5 tsp vanilla extract (optional)

Should also have some butter, margarine, or something with which to grease a 13"x9" metal baking pan.

Directions

(1) Prepare the apple mixture:

Peel apples and cut into top-to-bottom quarters, and remove the cores. Cut each quarter apple into three thin slices, and then chop each slice in half (along the short dimension).

Place the slices in a medium bowl, and add the honey and cinammon, mixing to coat the fruit.

Set aside.

(2) Preheat oven to 350 degrees, and grease the baking pan.

(3) Prepare the cake mixture:

Dump the flour and baking powder in a large bowl, and mix well. Then add sugar and oil. Begin to mix with an electric mixer on low speed, or with a wooden spoon. Add slightly beaten eggs, one-by-one, approximately ~1 min apart, all the while mixing slowly. Finally, add orange juice and vanilla extract. At this point, mix vigorously or with an electric mixer on medium speed for 2 minutes.

(4) Add the apple mixture into the cake mixture, and stir the ingredients together. Finally, transfer this to the baking pan, spreading it out evenly.

(5) Bake for 60-70 minutes until a toothpick inserted into the center of the cake comes out clean. It should have a golden brown color.
